Zucchini Pizza Treatin’ Ya

My aunt got this recipe in 7th grade home economics class and it’s been in the Baker family for over 30 years! We love it especially when the zukes come straight from a garden. Here’s what you do for some summer sizzles that will satisfy your hunger!ZucchiniPizzaBites-2.jpg

Zucchini
Stick butter (melted)
Seasoned bread crumbs
Pizza or marinara sauce
Parm cheese
Shredded cheese
Assorted pizza toppings (onion, peppers, pepperoni, mushrooms, sausage)

Instructions:

Slice zucchini (peel if you aren’t crazy about skin)

Dip slices into melted butter with a fork , then into breadcrumbs to coat.

Arrange on greased cookie sheet

Top each with marinara.

Top with cheese (original recipe used grated parmesian only which is how I like it but shredded cheese is the norm)

Add chopped pizza toppings.

Bake 350 degrees until a fork goes into zucchini easily (about 15-20 mins)
